  1. Preheat oven to 350F (180C) or Gas Mark 4.
  2. Cut the pork fillet into 4 thin slices and flatten them slightly using a rolling pin or the bottom of a heavy bottle.
  3. In a bowl, combine the minced pork, sausage meat, crushed garlic, parsley, Parmesan cheese, salt, pepper, and nutmeg.
  4. Add the beaten egg to the meat mixture and mix well until well combined and sticky.
  5. Lay the bacon rashers flat and spread a generous layer of the stuffing mixture onto each flattened slice of pork fillet.
  6. Roll up the pork slices tightly, starting from one end.
  7. Wrap each pork roll with a slice of bacon and secure with a cocktail stick.
  8. Lightly dust the rolls with seasoned flour, shaking off any excess.
  9. Heat the clarified butter in a flameproof casserole dish over medium heat.
  10. Place the pork rolls in the casserole and brown gently on all sides until golden.
  11. Pour the white wine over the rolls and allow it to bubble and reduce by half.
  12. Cover the casserole tightly with a lid and transfer to the preheated oven.
  13. Bake for 30-40 minutes until the pork is tender and cooked through.
  14. Remove from oven, discard cocktail sticks, and serve immediately.
