Description

This vibrant dish brings the smoky heat of chipotle peppers in adobo together with earthy cumin to create a deeply flavorful sauce. Skin-on, bone-in chicken thighs are seared to golden perfection, locking in juices while developing a rich crust. The sauce is built on a base of olive oil and the spicy adobo liquid, creating a glossy, aromatic coating. Grilled corn on the cob adds a sweet, charred contrast that balances the heat. Perfect for a casual weeknight dinner or a rustic weekend gathering, this recipe offers a comforting yet exciting twist on traditional Mediterranean flavors. It is simple to prepare but delivers complex, restaurant-quality taste.

Ingredients

Directions

  1. Preheat your oven to 400&# 194;°F (200ðC).
  2. Pat the skin-on, bone-in chicken thighs dry with paper towels and season generously with kosher salt and freshly ground black pepper.
  3. Heat 2 tablespoons of the olive oil in a large oven-safe skillet over medium-high heat.
  4. Place the chicken thighs skin-side down in the hot skillet and sear for 5-7 minutes until the skin is golden brown and crispy.
  5. Flip the chicken and sear the other side for 2-3 minutes, then remove the chicken from the skillet and set aside.
  6. In a blender or food processor, combine the chipotle chiles, the remaining 1 tablespoon of olive oil, the ground cumin, and a splash of the adobo sauce from the can. Blend until smooth.
  7. Pour the chipotle sauce into the same skillet used for the chicken, scraping up any browned bits from the bottom.
  8. Return the chicken thighs to the skillet, placing them on top of the sauce.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165ðF.
  10. While the chicken bakes, grill or roast the ears of corn on the cob until charred and tender.
  11. Serve the chicken thighs spooned with the smoky sauce alongside the grilled corn.
