Ingredients

Directions

  1. Remove giblets and neck from chicken cavity.
  2. Rinse chicken inside and out, then pat thoroughly dry with paper towels.
  3. Tie chicken legs together with kitchen string and tuck wing tips under the back.
  4. Place chicken breast-side up on a rack set inside a roasting pan.
  5. In a small bowl, whisk together Dijon mustard, soy sauce, minced ginger, and minced garlic.
  6. Brush the mustard mixture generously all over the chicken skin.
  7. Pour 1-1/2 cups of chicken stock into the bottom of the roasting pan.
  8. Roast in a preheated 325°F (160°C) oven, basting every 30 minutes with pan juices, for 2 hours.
  9. Check for doneness by piercing the thigh; juices should run clear and an internal thermometer should read 185°F (85°C).
  10. Transfer chicken to a platter, tent loosely with foil, and let rest for 10 minutes before carving.
  11. While chicken rests, skim excess fat from the surface of the pan juices.
  12. Sprinkle the all-purpose flour evenly over the hot pan juices.
  13. Cook over medium-high heat, stirring constantly for 1 minute to cook out the raw flour taste.
  14. Gradually pour in the remaining 1/2 cup of chicken stock while stirring continuously.
  15. Continue cooking and stirring until the gravy thickens to your desired consistency.
  16. Pour the hot gravy into a warmed gravy boat and serve alongside the carved chicken.

Note

Ensure the chicken is completely dry before applying the glaze to help the skin crisp up.

If you do not have a roasting rack, you can create one using a bed of thick-cut carrots, celery, and onions to lift the chicken off the bottom of the pan.

For a richer gravy, add a splash of white wine or apple cider to the roasting pan along with the initial stock.

Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. The gravy can be frozen for up to 2 months.
