Description

This Prosciutto-Provolone Hero is a robust and flavorful sandwich that elevates simple ingredients into a satisfying meal. The combination of salty prosciutto, savory hard salami, and creamy provolone cheese creates a rich umami profile. Fresh spinach adds a crisp texture and slight bitterness to balance the richness, while homemade basil pesto provides a vibrant, herbaceous kick. Perfect for lunch, a picnic, or a quick dinner, this sandwich is easy to assemble and impressive enough for entertaining. The hollowed-out Italian bread ensures every bite holds the delicious fillings without becoming soggy.

Ingredients

Directions

  1. In a food processor fitted with a chopping blade, combine 1/2 cup fresh basil leaves, 1/4 cup fresh parsley leaves, 2 tablespoons finely grated Parmesan cheese, 1 tablespoon pine nuts, 2 tablespoons olive oil, 1 garlic clove, and 1/8 teaspoon ground black pepper.
  2. Process the mixture until it forms a smooth, pastelike consistency.
  3. Using a serrated knife, cut the Italian bread horizontally in half to create the top and bottom of the sandwich.
  4. With your fingers, gently remove the soft bread from the center of each half, leaving a 1/2-inch-thick crust to hold the fillings.
  5. Spread a generous layer of the prepared pesto on the cut surfaces of both bread halves.
  6. Layer the bottom half of the bread with fresh spinach leaves.
  7. Overlap slices of provolone cheese over the spinach.
  8. Layer the prosciutto and thinly sliced hard salami (or cappicola) over the cheese.
  9. Place the top half of the bread over the fillings.
  10. Cut the hero sandwich crosswise into 4 individual servings.
  11. Transfer the sandwiches to a serving plate and serve immediately.
