Description

This Pumpkin & Tomato Bisque is a comforting twist on classic autumn soups, combining the earthy sweetness of pumpkin with the bright, acidic tang of canned whole tomatoes. The result is a velvety smooth texture that feels luxurious yet simple to prepare. Sauted onions provide a savory base, while a hint of maple syrup or honey balances the natural flavors perfectly. This dish is ideal for chilly evenings, offering a warm hug in a bowl.

Ingredients

Directions

  1. In a large 10-inch skillet or saucepan, melt the butter or heat the vegetable oil over medium-low heat.
  2. Add the chopped onion and saut slowly, stirring occasionally, until soft and translucent but not browned, about 6-7 minutes.
  3. Pour in 3 cups of chicken stock and bring to a gentle simmer. Partially cover and let simmer for 15 minutes to infuse the flavor.
  4. While the stock simmers, pour the whole tomatoes along with their juices into a food processor or blender.
  5. Add the maple syrup or honey to the tomatoes and blend until completely smooth.
  6. Add the pumpkin puree (or butternut squash puree) to the processor and blend again until fully incorporated and smooth.
  7. Strain the simmering stock through a fine-mesh sieve into a clean pot, catching the softened onions in the sieve.
  8. Transfer the strained onions to the food processor with the pumpkin-tomato mixture and blend briefly to incorporate them.
  9. For an extra-smooth texture, press the puree through a power strainer or fine-mesh sieve back into the pot with the stock.
  10. Stir the puree into the warm stock in the pot. Season generously with salt to taste.
  11. Reheat the soup gently over low heat until hot. Serve immediately, garnished with a swirl of red pepper puree if desired.
