Description

This elegant Pumpkin-Squash Bisque is the perfect centerpiece for a cozy autumn dinner or holiday gathering. The recipe features sugar pumpkins that are roasted until tender, then blended into a smooth, sweet, and savory soup. A unique twist involves a creamy cauliflower pure drizzled on top, adding a subtle texture contrast and visual appeal. The bisque is traditionally served inside the baked pumpkin shells, turning each bowl into a stunning edible vessel. Rich with the natural sweetness of fall squash and warmed with broth, it offers comforting, home-style flavor that feels both rustic and refined. Ideal for meal prep or special occasions, this dish brings warmth and festive cheer to your table without requiring complicated techniques.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Rinse the sugar pumpkins and pat them dry with a paper towel.
  3. Using a sharp knife, cut a wide circle around the stem of each pumpkin to create a lid.
  4. Remove the lids and use a spoon to scrape out the seeds and stringy pulp from the inside of each pumpkin.
  5. Place the hollowed pumpkins and their lids in a large shallow roasting pan or baking dish.
  6. Cover the pan tightly with aluminum foil.
  7. Bake for 30 to 50 minutes, or until the pumpkin flesh is tender when pierced with a fork.
  8. Check the lids after 30 minutes; if tender, remove them and set aside to prevent overcooking and collapsing.
  9. Once tender, remove pumpkins from oven and carefully scoop out the flesh into a bowl, reserving the shells for serving.
  10. In a large saucepan, bring chicken broth and cauliflower to a boil over high heat.
  11. Reduce heat to low, cover, and simmer until cauliflower is tender (about 10 minutes for fresh, 5 for frozen).
  12. Remove cauliflower with a slotted spoon and transfer to a blender or food processor, leaving the broth in the saucepan.
  13. Add chopped onion to the remaining broth in the saucepan; cover and heat to boiling.
  14. Cook until the onion is tender, about 5 minutes.
  15. In a small cup, whisk together 1/2 cup milk, flour, salt, and pepper until smooth.
  16. Stir the milk-flour mixture into the onion and broth in the saucepan.
  17. Cook over medium heat, stirring constantly, until the sauce thickens and comes to a boil.
  18. Remove the sauce from heat.
  19. In the blender, pure the cooked cauliflower with 1/2 cup of the hot sauce and the half-and-half until smooth.
  20. Pour the cauliflower soup into a small saucepan and keep warm over very low heat.
  21. In the same blender (no need to wash), blend the remaining sauce until smooth.
  22. Return the smooth sauce to the main saucepan and set aside.
  23. Add half of the mashed pumpkin and 3/4 cup milk to the blender.
  24. Blend until smooth, then pour into the saucepan with the sauce.
  25. Repeat with the remaining mashed pumpkin and remaining milk.
  26. Heat the pumpkin bisque mixture over low heat just until hot, stirring constantly. Do not allow to boil.
  27. Ladle the warm pumpkin bisque into the baked pumpkin "bowls" or regular serving bowls.
  28. Drizzle the creamy cauliflower soup on top of each serving for garnish.
  29. Serve immediately.

Note

Use sugar pumpkins (also known as pie pumpkins) for the best flavor and texture. Do not use large carving pumpkins, as they are watery and lack sweetness.

For a vegan version, substitute chicken broth with vegetable broth and replace half-and-half with a rich plant-based cream such as coconut cream or cashew cream.

The bisque can be made ahead of time. Store the soup base and cauliflower cream separately in the refrigerator for up to 3 days. Reheat gently on the stove before serving.

To prevent the pumpkin bowls from becoming too soggy, serve the bisque immediately after ladling. You can also brush the inside of the roasted shells with a little melted butter before filling to create a slight barrier.

Garnish with fresh thyme, pumpkin seeds, or a dollop of whipped cream for extra visual appeal and flavor contrast.
