Description

This vibrant Quinoa Casserole delivers a comforting, plant-based meal with distinct Indian-inspired flavors. The dish combines fluffy quinoa with a medley of fresh vegetables like broccoli, celery, and tomato, all brought together by the warmth of curry and the umami depth of shoyu. A touch of sesame oil adds richness, while brown rice vinegar provides a bright, tangy finish. It is an excellent choice for weeknight dinners or potlucks, offering a wholesome balance of textures and nutrients. Simple to prepare with pantry staples, this casserole is hearty enough to satisfy the whole family yet light enough to feel healthy. Serve it warm with a side salad or crusty bread for a complete experience.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Rinse the quinoa thoroughly under cold water until the water runs clear.
  3. In a large skillet over medium heat, dry-roast the rinsed quinoa until it becomes fragrant and begins to pop lightly.
  4. Transfer the roasted quinoa to a baking dish or casserole pan and add the water.
  5. In the same skillet, heat the sesame oil over medium heat. Add the chopped onion, pressed garlic, and curry powder.
  6. Saut the onion mixture until the onions are translucent and fragrant, about 3-5 minutes.
  7. Add the chopped celery, broccoli, and tomato to the skillet. Saut briefly for 2-3 minutes until the vegetables begin to soften but retain some crunch.
  8. Pour the vegetable mixture over the quinoa and water in the baking dish.
  9. Stir in the shoyu and brown rice vinegar, mixing everything together evenly.
  10. Cover the dish with a lid or aluminum foil and bake in the preheated oven for 45 minutes, or until the quinoa is tender and the liquid is absorbed.
  11. Let stand for 5 minutes before serving.
