Randy Robinson’s Chili
Description
This award-winning chili is a masterpiece of slow cooking, featuring tender chunks of round steak and savory ground pork. The recipe uses a unique two-phase method: first building a robust broth with beef and chicken stock, then deepening the flavor with extra tomato sauce, chili powders, and a touch of sweetness. The result is a hearty, complex stew that is perfect for family dinners or potlucks. It offers a satisfying texture with soft vegetables and melt-in-your-mouth meat, balanced by a warm, aromatic spice profile.Directions
-
Cut the beef round steak into bite-sized chunks and toss with all-purpose flour until evenly coated.
-
Heat cooking oil in a large Dutch oven or heavy pot over medium heat.
-
Add the floured beef and ground pork to the pot, stirring occasionally, until the beef is browned on all sides.
-
Drain any excess fat from the pot.
-
Stir in the chopped onion, granulated garlic, beef broth, chicken broth, tomato sauce, ground cumin, drained green chilis, chopped jalapeno, black pepper, and 3 tablespoons of chili powder.
-
Increase heat to bring the mixture to a boil, then reduce heat to low.
-
Cover the pot and simmer gently for 1 1/2 hours.
-
Uncover the pot and stir in the second can of tomato sauce, 4 tablespoons of chili powder, New Mexico chili powder, additional ground cumin, granulated garlic, Tabasco sauce, and brown sugar.
-
Simmer uncovered for about 45 minutes, or until the beef is very tender and the flavors have melded.
