Description

This Raspberry Luscious Gelatin Salad is a nostalgic favorite that combines the bright tartness of raspberries with the creamy sweetness of bananas and pineapple. The addition of sour cream creates a unique, rich texture that sets it apart from standard fruit jello molds. It is a perfect make-ahead dessert or side dish for potlucks, summer picnics, and family gatherings. The layers of fruit and cream provide a refreshing contrast in every bite. Easy to assemble with common pantry ingredients, this dish brings a touch of retro charm to your table. Serve chilled for the best flavor and texture.

Ingredients

Directions

  1. In a large mixing bowl, combine the raspberry gelatin mix and unflavored gelatin.
  2. Pour the boiling water over the gelatin mixture and stir continuously until completely dissolved.
  3. Add the cold water, drained crushed pineapple, mashed bananas, and raspberries to the bowl.
  4. Stir gently to combine all ingredients evenly.
  5. Pour half of the gelatin mixture into a glass serving bowl or a 13x9-inch baking dish.
  6. Refrigerate the dish until the layer is set and firm, about 1-2 hours.
  7. While the first layer sets, let the remaining half of the gelatin mixture sit at room temperature.
  8. Once the first layer is firm, spread the sour cream evenly over the top of the gelatin.
  9. Carefully pour the remaining room-temperature gelatin mixture over the sour cream layer.
  10. Refrigerate until the entire salad is firm, at least 2-4 hours, before serving.

Note

For best results, use ripe bananas to ensure they mash smoothly and add sufficient sweetness.

Ensure the pineapple is well-drained to prevent the gelatin from becoming too watery.

To unmold, run a knife around the edges and dip the bowl briefly in warm water.
