Servings: 1 Difficulty: Advanced
A simple method for extracting pure wheat gluten to create high-protein vegan meat alternatives like seitan.
Raw Gluten recipe image

Raw gluten is the essential foundation for making homemade seitan, a popular high-protein meat substitute. By simply washing wheat dough with water, you remove the starch, leaving behind a chewy, elastic protein mass that mimics the texture of meat. This recipe uses basic whole wheat flour and water to create a versatile base for your cooking. The resulting gluten is neutral in flavor, allowing it to absorb marinades, broths, and spices beautifully. It is perfect for vegan and vegetarian diets, offering a satisfying chew and substantial protein content. Whether you plan to steam, boil, or bake it into “wheat meat,” this raw gluten provides a hearty, home-style texture that is far superior to store-bought alternatives. It is a cost-effective, healthy ingredient that brings culinary creativity to plant-based meals.

Ingredients

Directions

  1. Pour the water into a large mixing bowl.
  2. Add about 3 cups of the flour to the water and mix well until combined.
  3. Beat the dough vigorously for about 100 strokes, or until it becomes elastic.
  4. Gradually add enough of the remaining flour to form a kneadable dough.
  5. Turn the dough out onto a generously floured surface.
  6. Knead in enough flour to make a firm and nonsticky dough.
  7. Knead the dough vigorously for 20 minutes.
  8. If kneading becomes difficult, pound the dough with a rolling pin or your fists to develop elasticity.
  9. Continue kneading and/or pounding until the dough becomes very smooth and elastic.
  10. Fill a large bowl with room-temperature water and place it in the sink.
  11. Place the dough into the bowl of water.
  12. Work the dough by rubbing and squeezing it between your hands, similar to washing clothes.
  13. When the water becomes very cloudy, pour the water and dough through a colander.
  14. Repeat the squeezing and rinsing process with fresh water until the water is practically clear and the dough resembles a large, elastic wad of chewing gum.
  15. The remaining elastic mass is raw gluten; drain well and proceed to use for seitan or other recipes.

Note

If you want to save the starch water, place an empty bowl under the colander to catch it. The starch water can be used for baking or making noodles.

To ensure the dough is kneaded enough before washing, break off a small piece and wash it. If sufficiently kneaded, the starch will wash away, leaving the elastic gluten.

Don't worry if the dough falls apart during washing, as it will come back together as you squeeze and rinse it.

Raw gluten can be stored in the refrigerator in an airtight container for up to 3 days, or frozen for longer storage. Always cook it thoroughly before eating.
