Description

This unique Indian-inspired dish balances savory spices with natural sweetness. The base of nutty red rice provides a hearty texture, while the cauliflower is simmered in a fragrant blend of garam masala and aromatic spices. The standout feature is the addition of diced ripe bananas, which are sauted until caramelized, adding a surprising depth of flavor that complements the warm curry notes. Its a creative, plant-based meal that feels both comforting and exotic. Perfect for adventurous eaters looking to explore new flavor profiles, this recipe comes together quickly using pantry staples. Serve it as a standalone main or alongside a light salad for a complete, satisfying dinner that brings warmth to the table.

Ingredients

Directions

  1. Rinse the red rice thoroughly under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice, bay leaf, and stock. Bring to a boil over high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 25-30 minutes or until the rice is tender and liquid is absorbed.
  4. While the rice cooks, heat vegetable oil in a large skillet over medium-high heat.
  5. Add the diced onion and saut for 3-4 minutes until softened and translucent.
  6. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  7. Add the cauliflower florets to the skillet and toss to coat with the onion and garlic mixture.
  8. Sprinkle with garam masala, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until cauliflower is tender-crisp and lightly browned.
  9. Peel the bananas and dice them into small pieces.
  10. Push the cauliflower to the side of the skillet or remove it to a serving dish. Add the diced bananas to the hot skillet.
  11. Saut the bananas for 2-3 minutes until they are lightly caramelized and golden.
  12. Remove the bay leaf from the cooked rice and fluff with a fork.
  13. Serve the red rice on plates, topped with the curried cauliflower and caramelized bananas.

Note

For a fully vegan meal, ensure you use vegetable stock instead of chicken stock.

Red bananas have a creamier texture and slightly sweeter flavor than yellow bananas, but either variety works well. If using yellow bananas, choose ones that are ripe but still firm to prevent them from turning to mush.

You can substitute red rice with brown basmati or regular brown rice if red rice is unavailable. Adjust cooking time as per package instructions.

For extra richness, stir a tablespoon of coconut milk into the cauliflower during the last minute of cooking.

This dish is best served immediately while the rice is hot and the bananas are warm. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently to preserve the texture of the cauliflower.
