Description

These Refrigerator Fruit Cookies offer a delightful contrast between a rich, buttery shortbread crust and a dense, chewy layer of mixed candied fruits and nuts. The combination of dates, cherries, and pineapple provides bursts of sweetness, while pecans, walnuts, and Brazil nuts add satisfying crunch. This no-bake assembly (until the final slice) makes it an ideal treat for holidays, afternoon tea, or as a thoughtful gift. The dough is chilled thoroughly to allow for easy slicing into uniform bars.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the chopped dates, candied cherries, candied pineapple, pecans, walnuts, and Brazil nuts. Set aside.
  3. In a separate mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  4. Beat in the salt, vanilla extract, and eggs until well combined.
  5. In a small bowl, mix the baking soda with a small portion of the flour (about 1 tablespoon) to prevent clumping.
  6. Add the soda-flour mixture to the butter mixture and beat well.
  7. Gradually add the remaining flour to the wet ingredients, mixing until just combined.
  8. Stir in the reserved fruit and nut mixture until evenly distributed throughout the dough.
  9. Divide the dough into 4 equal portions and shape each into a log.
  10. Wrap each log tightly in waxed paper or plastic wrap.
  11. Refrigerate the logs for at least 1 hour, or until firm enough to slice.
  12. When ready to serve, slice the chilled logs into cookies and bake on a baking sheet for about 10 minutes, or until lightly golden.
