Reuben Loaf
Description
Transform the classic deli sandwich into a warm, shareable bread experience with this Reuben Loaf. This hearty dish encases tender corned beef, melted Swiss cheese, and tangy sauerkraut within a soft, yeast-raised dough brushed with Thousand Island dressing. The result is a comforting fusion of textures: crispy, poppy-seed-crusted exterior giving way to gooey, savory fillings. Its an ideal centerpiece for potlucks, game day gatherings, or a unique weeknight dinner. The aroma of baking bread mixed with pickled cabbage is irresistible. Serve it sliced and warm for the best experience, allowing the cheese to stretch and the flavors to meld perfectly.Ingredients
Directions
-
In a large mixing bowl, combine 2 1/4 cups of the flour, yeast, sugar, softened butter, and salt.
-
Stir in the warm water and mix until a soft dough forms.
-
Add the remaining 1 1/4 cups of flour, a little at a time, if necessary to form a manageable dough.
-
Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 4 to 5 minutes.
-
Let the dough rest for 10 minutes to relax the gluten, making it easier to roll.
-
On a lightly greased baking sheet or floured surface, roll the dough into a 14x10 inch rectangle.
-
Spread the Thousand Island dressing down the center of the dough, creating a strip about 4 inches wide, leaving a 3/4-inch border around the edges.
-
Layer the corned beef, Swiss cheese, and drained sauerkraut evenly over the dressing.
-
Fold the remaining half of the dough over the meat mixture to cover the filling.
-
Pinch the edges together firmly to seal the loaf and prevent leaking during baking.
-
Cut three or four small slits into the top of the loaf to allow steam to escape.
-
Brush the top of the loaf with the beaten egg white and sprinkle generously with poppy seeds.
-
Bake in a preheated 400F (204C) oven for 25 minutes, or until the loaf is golden brown and cooked through.
-
Let cool for 5 minutes before slicing and serving warm.

Note
Ensure the sauerkraut is very well drained to prevent the bread from becoming soggy. Pressing it in a clean kitchen towel helps remove excess moisture.
If using cold ingredients like cheese or meat, let them come to room temperature before assembling to ensure even baking.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat slices in a toaster oven or microwave for best results.
For a gluten-free version, substitute the all-purpose flour with a high-quality gluten-free bread flour blend.
