Description

This comforting rice dessert transforms simple basmati rice into a luxurious, creamy treat. The long grains soften perfectly in whole milk, creating a rich base that soaks up the aromatic warmth of green cardamom. Sweetened with granulated sugar, the dish balances earthy spice with gentle sweetness. Toasted pistachios and plump dark raisins add delightful texture and bursts of flavor in every spoonful. It serves as an elegant yet approachable ending to a meal, suitable for both intimate dinners and festive gatherings. Easy to prepare with pantry staples, this recipe offers a soothing, homemade feel that warms the soul.

Ingredients

Directions

  1. Rinse the basmati rice under cold water until the water runs clear, then drain well.
  2. In a heavy-bottomed saucepan, combine the rinsed rice, whole milk, and cardamom pods.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking.
  4. Reduce the heat to low and simmer, uncovered, stirring frequently to ensure even cooking.
  5. Continue cooking until the rice is very tender and has absorbed most of the milk, about 30 minutes.
  6. Remove the pan from the heat and discard the cardamom pods.
  7. Stir in the granulated sugar until completely dissolved.
  8. Fold in the raisins and let the mixture rest for 5 minutes to absorb residual heat.
  9. Serve warm, garnished with chopped pistachios and sliced almonds.

If the rice sticks to the bottom of the pan, lower the heat immediately and stir gently.

For a smoother texture, you can grind the cardamom seeds before adding them, but whole pods allow for easy removal.
