Ingredients

Directions

  1. Combine the rice, water, and salt in a heavy saucepan.
  2. Bring to a boil, reduce the heat, cover, and cook until the water is absorbed, about 15 minutes.
  3. Remove from heat, fluff with a fork, cover, and let cool completely.
  4. Butter the bottom and sides of a 6-cup baking dish or 8 individual casseroles (ramekins).
  5. Sprinkle with bread crumbs and roll the dish around to coat all the surface with crumbs.
  6. Tap out any excess bread crumbs.
  7. Preheat the oven to 325 degrees F (163°C).
  8. Beat the eggs lightly in a large bowl.
  9. Add the stout, 1/3 cup of the cream, vanilla, sugar, and spices and stir to combine.
  10. Add the cooled rice and stir to break up any clumps.
  11. Toss the chopped dates in flour to coat them evenly, shaking off the excess, and stir them into the rice mixture.
  12. Pour the mixture into the prepared baking dish.
  13. Cut the remaining butter into small pieces and scatter them on top.
  14. Bake uncovered until set, about 1 hour.
  15. Serve warm, with the rest of the cream, lightly whipped.
