  1. Prepare the bouquet garni by tying 3-4 sprigs of parsley, 1 bay leaf, 1/2 celery stalk with leaves, and 1/2 tsp dry thyme together in a piece of cheesecloth. Leave the string long enough to tie to the pot handle for easy removal later.
  2. Pat the chicken pieces dry thoroughly with paper towels and season generously with salt and pepper.
  3. Heat 4 tablespoons of olive oil in a large skillet or Dutch oven over medium heat.
  4. Add chicken pieces in batches, browning them on all sides until golden. Partially cover the pan to help cook through slightly.
  5. Remove browned chicken pieces to a plate and set aside. Add a little more olive oil to the pan if needed.
  6. Reduce heat to medium-low and add finely minced onions and 1 tsp minced garlic. Cook until onions are soft and lightly browned.
  7. Add sliced red and green peppers, saffron, and hot red pepper flakes. Cover and cook until peppers are tender.
  8. Stir in cubed prosciutto, chopped tomatoes, and tomato paste (if using). Bring to a boil and cook uncovered until most of the tomato juice has evaporated.
  9. Pour in white wine, add the bouquet garni, and pour in chicken stock. Return the chicken pieces to the pan, nestling them into the sauce.
  10. Bring the liquid to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes until chicken is tender and cooked through.
  11. Remove the bouquet garni. If desired, thicken the sauce with cornstarch mixed with a little wine. Stir in raw shrimp and cook for 2-3 minutes until pink.
  12. Garnish with finely minced parsley. Serve hot with fried French bread on the side.
