Rich Chocolate Torte Cake
Description
This indulgent Rich Chocolate Torte is a decadent dessert that balances deep cocoa flavor with bright berry notes. The cake itself is incredibly moist and tender, achieved by folding whipped egg whites into a rich chocolate batter. After baking, it is drenched in a warm brandy-infused syrup, which keeps the torte soft and adds a sophisticated warmth. It is paired with a vibrant, silky strawberry sauce that cuts through the richness of the chocolate. Perfect for celebrations, romantic dinners, or when you want to treat yourself to a truly special homemade dessert.Directions
-
Preheat oven to 180°C (350°F). Lightly grease a 2-pint loaf tin and line with baking parchment.
-
Break the plain chocolate into a heat-proof bowl. Add the instant coffee and milk.
-
Place the bowl over a pan of simmering water (double boiler) and stir until the chocolate is fully melted and smooth. Remove from heat and leave to cool slightly.
-
In a large mixing bowl, cream the softened butter and brown sugar together until pale and fluffy.
-
Beat in the egg yolks one at a time, then stir in the cocoa powder and the cooled chocolate mixture until well combined.
-
In a separate clean bowl, whisk the egg whites until they form stiff peaks.
-
Gently fold half of the whipped egg whites into the chocolate mixture to lighten it.
-
Carefully fold in the remaining egg whites until just combined, being careful not to deflate the batter.
-
Pour the batter into the prepared loaf tin and smooth the top.
-
Bake for 40-45 minutes, or until the center is firm to the touch and a skewer inserted comes out clean.
-
While the cake bakes, make the syrup: In a small saucepan, combine the granulated sugar with 150ml (1/4 pint) cold water.
-
Heat over medium heat, stirring until the sugar dissolves. Bring to a boil and boil rapidly for 3 minutes. Remove from heat and stir in the brandy. Let cool.
-
To make the sauce, hull and mash the strawberries. Press them through a sieve to remove the seeds, creating a smooth puree. Set aside to chill.
-
Once the cake is baked, cover it with a damp tea towel and let it cool in the tin for 15 minutes.
-
Remove the towel. Using a skewer, prick the top of the cake all over, creating many small holes.
-
Slowly pour the brandy syrup over the cake, allowing it to soak in completely.
-
Let the cake cool completely in the tin. Once cold, remove from the tin, peel off the parchment paper, and transfer to a serving plate.
-
Slice the torte and arrange slices on plates. Spoon the chilled strawberry sauce over each slice.
-
Garnish with fresh strawberry slices and serve immediately.
