Description

This Roast Caribou is a hearty, protein-packed main course that highlights the lean, beef-like flavor of this game meat. The overnight vinegar and garlic marinade tenderizes the meat while infusing it with deep savory notes. A thick paste of tomatoes, brown sugar, and mustard creates a delicious crust that balances the natural earthiness of the caribou. Perfect for a special weekend dinner or a rustic holiday meal, this dish serves six and pairs beautifully with roasted root vegetables or mashed potatoes. The slow roasting method ensures the meat remains juicy and tender throughout.

Ingredients

Directions

  1. Combine 1/2 cup vinegar, 2 cloves minced garlic, and 1 tablespoon salt in a large resealable plastic bag.
  2. Place the caribou roast in the bag, seal tightly, and turn to coat evenly. Refrigerate overnight, turning occasionally.
  3. Remove the roast from the marinade and discard the liquid. Pat the meat thoroughly dry with paper towels.
  4. Preheat your oven to 450F (230C).
  5. Roll the dried roast in the flour, coating it evenly. Shake off any excess flour.
  6. Heat the oil in a large oven-safe skillet or Dutch oven over medium-high heat. Brown the roast on all sides until golden.
  7. In a small bowl, mix the remaining 2 cloves minced garlic, brown sugar, prepared mustard, Worcestershire sauce, vinegar or lemon juice, and crushed tomatoes to form a thick paste.
  8. Smear the tomato paste mixture evenly over the top and sides of the roasted meat.
  9. Place the skillet in the preheated oven. Roast at 450F (232C) for 15 minutes.
  10. Reduce the oven temperature to 300F (150C). Continue roasting for 60-80 minutes, or until the internal temperature reaches your desired doneness.
  11. Remove the roast from the oven and let it rest for 10 minutes before slicing.
  12. While the meat rests, place the skillet on the stovetop over medium heat. Deglaze the pan with a splash of water or broth, scraping up the browned bits. Simmer to create a gravy.
