Description

This elegant dish transforms simple roast chicken into a sophisticated centerpiece with vibrant Indian flavors. The chicken is seasoned, roasted until tender, then shredded and tossed in a creamy, aromatic yogurt-curry dressing that adds depth and tang. Served on a bed of crisp Belgian endive and spinach leaves, the salad is brightened with diced tomatoes, mixed baby greens, and delicate slivers of papaya. Toasted coconut, julienned carrots, zucchini, and daikon radish add delightful crunch and color, creating a harmonious balance of textures.

Ingredients

Directions

  1. Preheat oven to 375°F (190°C).
  2. Pat the whole chicken dry with paper towels. Season the inside and outside generously with salt and pepper.
  3. Place the chicken in a roasting pan or on a rack in a baking sheet. Roast in the preheated oven for approximately 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) and juices run clear.
  4. Remove chicken from the oven and let it rest for 15-20 minutes.
  5. Once cool enough to handle, remove the skin and bones. Shred the meat into bite-sized pieces. You should have approximately 1 1/4 pounds of shredded meat.
  6. Place the shredded chicken in a large mixing bowl.
  7. Add the yogurt-curry dressing to the chicken and toss gently until the meat is evenly coated.
  8. Wash and dry the Belgian endive and spinach leaves. Trim the ends if necessary.
  9. For each serving, arrange 3 Belgian endive leaves and 3 spinach leaves around the edge of a large plate to resemble flower petals.
  10. Place 1 teaspoon of the diced seeded tomato onto each endive leaf.
  11. Place a handful of mixed baby greens in the center of the plate.
  12. Spoon the dressed shredded chicken over the center greens.
  13. Stand 3 slices of papaya upright around three sides of the chicken mound for decoration.
  14. Sprinkle 1 tablespoon of the toasted shredded coconut over the chicken.
  15. Top with 1/2 tablespoon each of the julienned carrot, zucchini, and daikon radish.
  16. Serve immediately while the vegetables are crisp.
