Description

This comforting one-pan meal combines a bone-in leg of lamb with a rich gratin of thinly sliced potatoes, onions, and roasted red peppers. The lamb roasts directly above the vegetables, allowing savory juices to drip down and infuse the layers with deep flavor. Infused with garlic, fresh thyme, and white wine, this dish offers a perfect balance of tender meat and soft, aromatic vegetables. It is an ideal centerpiece for weekend dinners or holiday gatherings, requiring minimal active prep time but delivering impressive results. Serve with crusty bread to soak up the delicious pan drippings.

Ingredients

Directions

  1. Preheat the oven to 400F (200C).
  2. Split 1 clove of garlic in half. Rub the bottom of a 16x10x2-inch oval gratin dish with the cut side of the garlic clove.
  3. Arrange the thinly sliced potatoes evenly over the bottom of the prepared gratin dish.
  4. Chop the remaining 5 garlic cloves and mix them with the minced thyme.
  5. Season the potatoes generously with salt, pepper, and one-third of the garlic-thyme mixture.
  6. Layer the sliced onions on top of the potatoes. Season with salt, pepper, and another one-third of the garlic-thyme mixture.
  7. Layer the roasted red peppers on top of the onions. Season with salt, pepper, and the remaining one-third of the garlic-thyme mixture.
  8. Pour the white wine over the vegetable layers, followed by the olive oil.
  9. Trim any excess fat from the leg of lamb. Season the lamb generously on all sides with salt and pepper.
  10. Place a sturdy oven rack directly on top of the gratin dish. Set the leg of lamb on the rack so that it sits above the vegetables, allowing juices to drip down during cooking.
  11. Roast uncovered at 400F (204C) for approximately 1 hour and 15 minutes for rare, or until desired doneness is reached.
  12. Turn the lamb every 15 minutes and baste it with the liquid accumulating in the dish underneath.
  13. Remove the entire setup from the oven. Let the lamb stand on the rack for 10-15 minutes so that juices continue to drip into the gratin and the meat rests.
  14. Carve the lamb into thin slices. Arrange the sliced lamb on warmed dinner plates or a serving platter alongside the vegetable gratin.

Note

Ensure your oven rack fits securely on top of the gratin dish before starting. If the rack is not stable, consider roasting the lamb on a separate rack in the oven above the gratin dish, though this may reduce the flavor infusion from drippings.

For medium-rare lamb, roast for an additional 10-15 minutes. Use a meat thermometer to check internal temperature: 125F for rare, 135F for medium-rare, and 145F for medium.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.

If fresh thyme is unavailable, you can substitute with 1 teaspoon of dried thyme, reducing the quantity slightly as dried herbs are more potent.
