Description

This vibrant Roast Pepper Relish is a versatile condiment that brings a burst of smoky sweetness and tangy brightness to any meal. Featuring charred bell peppers, crisp onions, and aromatic spices like garam masala and mustard, it offers a complex flavor profile that elevates simple dishes. The texture is a delightful mix of soft, tender peppers and crunchy onion slivers, suspended in a light, zesty dressing. Perfect for spreading on crusty bread, serving alongside cold meats, or adding a fresh kick to game pies and sandwiches.

Directions

  1. Preheat oven to 400°F (205°C).
  2. Cut the yellow, red, and green bell peppers in half and remove seeds if not already done.
  3. Place the peppers cut-side down in a roasting pan.
  4. Bake in the preheated oven for 30 minutes, or until the skins begin to blister and blacken.
  5. Remove from oven and allow peppers to cool slightly.
  6. Peel off the charred skins from the peppers.
  7. Cut the peeled peppers into fourths and then slice into thin strips.
  8. Slice the onion into thin strips.
  9. Place the sliced peppers onto a shallow serving dish.
  10. Sprinkle the sliced onions over the peppers.
  11. In a screw-topped jar, combine corn oil, lemon juice, coarsely ground mustard, crushed garlic, garam masala, sugar, salt, and fresh ground pepper.
  12. Shake the jar vigorously until the dressing is well blended and emulsified.
  13. Pour the dressing mixture evenly over the peppers and onions.
  14. Cover and marinate for several hours, stirring occasionally, to allow flavors to meld.
