Description

These Rocky Road Fudge Bars are the ultimate indulgent dessert, combining three distinct textures in every bite. The base is a dense, fudgy chocolate brownie studded with crunchy walnuts. Layered on top is a tangy, smooth cream cheese filling that adds a sophisticated contrast to the sweetness. Once baked, the bars are crowned with toasted marshmallow miniatures and a glossy, no-bake chocolate fudge topping. The result is a complex flavor profile that balances rich cocoa, creamy dairy, and nutty crunch. Perfect for potlucks, holiday gatherings, or when you need to impress guests with a homemade treat that feels decadent yet relies on pantry staples. They store beautifully in the fridge, making them a great make-ahead dessert.

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 13x9-inch baking pan.
  2. In a medium saucepan, melt the butter and unsweetened chocolate over low heat, stirring until smooth. Remove from heat.
  3. Stir in the sugar, flour, chopped walnuts, baking powder, vanilla, and eggs into the melted chocolate mixture. Mix until well combined.
  4. Spread the chocolate batter evenly into the prepared baking pan.
  5. In a large bowl, beat the softened cream cheese, sugar, flour, softened butter, egg, and vanilla on medium speed for 1 minute until smooth and fluffy.
  6. Stir the chopped walnuts into the cream cheese mixture.
  7. Spread the cream cheese mixture evenly over the chocolate layer in the pan.
  8. Sprinkle the semi-sweet chocolate bits evenly over the cream cheese layer.
  9. Bake for 25 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and immediately sprinkle the marshmallow miniatures evenly over the hot bars.
  11. Return to oven and bake for 2 more minutes to toast the marshmallows.
  12. While bars bake, prepare topping: In a small saucepan, melt the butter, unsweetened chocolate, cream cheese, and milk over low heat, stirring until smooth.
  13. Remove topping from heat and stir in the powdered sugar and vanilla until smooth and glossy.
  14. Pour the chocolate topping over the warm bars. Use a spoon to gently swirl the topping into the marshmallows and chocolate chips.
  15. Allow bars to cool completely in the pan on a wire rack before cutting into squares.
