Ingredients

Directions

  1. In a small bowl, combine warm water and active dry yeast. Let stand for 5-10 minutes until foamy.
  2. In a large mixing bowl, stir in olive oil to the yeast mixture.
  3. Add bread flour and salt to the wet ingredients. Mix until a shaggy dough forms.
  4. Turn dough onto a floured surface and knead for 10-15 minutes until smooth and elastic.
  5. Shape dough into a ball, place in a lightly oiled bowl, cover with plastic wrap, and refrigerate for 1 hour.
  6. Preheat oven to 400&# 194;°F (200°C).
  7. On a floured surface, roll out the chilled dough into a large oval, approximately 24 inches long and 8-10 inches wide.
  8. Spread 2 oz of pesto in a long stripe down the center of the dough, starting about 2 inches from the front edge and stopping 2 inches from the back edge.
  9. Layer 1/4 lb thinly sliced ham over the pesto, followed by 1/4 lb sliced provolone cheese, 1/8 lb thinly sliced coppacolla, sliced roasted red peppers, and chopped pepperoncinis.
  10. Beat 1 egg with 1 egg white. Brush the egg wash onto the 2-inch back edge and the ends of the dough.
  11. Starting from the front edge, tightly roll up the dough, ensuring the back edge seals underneath. Tuck in the ends.
  12. Place the roll seam-side down on a baking sheet sprinkled with cornmeal.
  13. Brush the top of the roll with remaining egg white.
  14. Bake for 20 minutes, or until golden brown and cooked through.
  15. Cool slightly before slicing into pinwheels.
