Rose Ice Cream
Description
This elegant Rose Ice Cream offers a sophisticated twist on classic frozen desserts, blending the rich, creamy base of a traditional custard with the delicate, perfume-like aroma of rose. The combination of fresh rose petals and rose-scented geranium leaves infuses the mixture with a complex floral character that is both refreshing and indulgent. Perfect for spring dinners, romantic evenings, or as a stunning finale to a garden-themed meal, this ice cream balances sweetness with aromatic depth. The custard base ensures a luxuriously smooth texture, while the floral elements provide a unique sensory experience that stands out from standard vanilla or chocolate varieties. It is a beautiful, homemade treat that feels special yet is achievable for home cooks looking to impress guests with refined, seasonal flavors.Ingredients
Directions
-
In a heavy 2-quart saucepan or double boiler over medium-low heat, combine the cream, milk, and sugar.
-
Heat the mixture, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling.
-
In a small bowl, lightly whisk the egg yolks.
-
While whisking constantly, slowly pour 1 cup of the hot cream mixture into the egg yolks to temper them.
-
Pour the egg mixture back into the saucepan with the remaining cream mixture.
-
Place the saucepan over medium-low heat and stir constantly with a wooden spoon.
-
Cook for about 8 minutes, or until the custard thickens enough to coat the back of a spoon.
-
To test for doneness, dip a metal spoon into the mixture and run your finger across the back; the custard is done when your finger leaves a clear, clean trail.
-
Alternatively, check with a candy thermometer; the mixture should reach 175-180F (79-82C). Do not let it boil, or it may curdle.
-
Remove the pan from the heat and stir in the vanilla extract.
-
Stir the chopped rose-scented geranium leaves and 1 1/2 cups of loosely packed rose petals (with white bases removed) into the hot custard base.
-
Cover the mixture and chill in the refrigerator for at least 1 hour, or until completely cold.
-
Strain the mixture through a fine-mesh sieve to remove the solid rose petals and geranium leaves.
-
Taste the strained mixture and stir in rose water if desired for additional floral flavor.
-
Stir in 3 tablespoons of chopped pink rose petals (with white bases removed) for texture and garnish.
-
Pour the mixture into an ice-cream maker and freeze according to the manufacturer's instructions.
