It pairs beautifully with steamed vegetables or new potatoes, making it a complete and satisfying family dinner. The combination of creamy textures and savory flavors ensures this dish will become a favorite in your rotation.

Ingredients

Directions

  1. Preheat oven to 375 degrees F (191&# 194;°C). Spread sliced almonds on a baking sheet and bake for 5 to 8 minutes or until brown and fragrant. Watch closely to prevent burning. Set aside to cool.
  2. In a small saucepan over medium heat, melt 2 tablespoons butter. Stir in 2 tablespoons flour until smooth. Cook, stirring constantly, for about 2 minutes until the mixture turns golden.
  3. Whisk in 1 cup milk, reduce heat to low, and cook slowly, stirring frequently, until the sauce thickens.
  4. Add 1 cup grated cheddar cheese and 2 tablespoons grated Parmesan cheese to the saucepan. Stir until the cheeses are completely melted and the sauce is smooth.
  5. Stir in 1 dash red pepper sauce and 1/2 teaspoon Worcestershire sauce. Adjust seasoning with salt to taste. Remove from heat and keep warm.
  6. In a small bowl, stir together 3/4 cup sour cream and 3/4 cup mayonnaise. Set aside.
  7. Preheat the oven to 450 degrees F (232ðC). Rinse 6 boneless salmon fillets (8 ounces each) and pat dry with paper towels.
  8. Pour 1/4 inch of water into a 9-by-13-inch baking pan. Lightly sprinkle the salmon fillets with seasoning salt and place them in the baking pan.
  9. Spoon equal amounts of the sour cream-mayonnaise mixture over each salmon fillet.
  10. Sprinkle 1 tablespoon of the remaining grated Parmesan cheese over each fillet and dust lightly with paprika.
  11. Bake for 15 minutes, or until the fish flakes easily with a fork. Remove from oven and keep warm.
  12. To serve, pour equal amounts of the warm cheese sauce onto 6 plates. Place a salmon fillet in the center of each pool of sauce.
  13. Top each fillet with the toasted almonds. Serve immediately.

Note

Storage: Store leftover salmon and sauce separately in airtight containers in the refrigerator for up to 2 days. Reheat gently to avoid drying out the fish.

Substitutions: You can substitute cheddar with Gruyère or Swiss cheese for a different flavor profile. Almond meal can be used instead of sliced almonds if preferred.

Serving Suggestion: This dish pairs wonderfully with steamed new potatoes, asparagus, or a simple green salad.

Tip: Ensure your cheese sauce is kept warm while the fish bakes so it pours easily when serving.
