  1. Preheat oven to 350°F (175°C).
  2. Pound the chicken breasts between sheets of plastic wrap until they are about 1/4-inch thick.
  3. Finely chop the walnuts and roll the quartered Boursin cheese pieces in them until fully coated.
  4. Place one large steamed spinach leaf on each flattened chicken breast.
  5. Top each spinach leaf with a walnut-coated cheese quarter.
  6. Fold the sides of the chicken over the filling and roll up tightly to form a mound or cylinder.
  7. Season the outside of the chicken rolls with salt and pepper.
  8. Place the chicken rolls seam-side down in a baking dish.
  9. Cover the dish and bake for 30 minutes, or until the chicken is cooked through and fork-tender.
  10. While the chicken bakes, combine the dry white wine and raspberry vinaigrette in a small saucepan.
  11. Bring the mixture to a simmer over medium heat and cook until reduced by half.
  12. Stir in the margarine and cook until melted and the sauce is smooth.
  13. Pour the warm sauce over the baked chicken rolls.
