Description

These golden, flaky salmon turnovers are a delightful appetizer or light main course. The filling combines canned salmon with a rich blend of ricotta, mozzarella, and cream cheese, seasoned with fresh garlic for a savory kick. Wrapped in delicate layers of buttered phyllo dough, they bake until crisp and bubbly. Perfect for potlucks, holiday parties, or a quick weeknight dinner that feels indulgent. The combination of soft, creamy cheese and flaky pastry creates a satisfying textural contrast. Use high-quality canned salmon for the best flavor, and ensure your phyllo dough stays covered while working to prevent it from drying out. Serve warm for the best experience.

Ingredients

Directions

  1. Preheat oven to 400&# 194;°F (200°C).
  2. In a small saucepan, melt the butter or margarine with olive oil over low heat. Set aside.
  3. In a mixing bowl, combine the ricotta, mozzarella, cream cheese, flaked salmon, and minced garlic. Mix until well blended.
  4. Lay out three sheets of phyllo dough. Brush each sheet lightly with the melted butter mixture, stacking them on top of each other as you go.
  5. Cut the stacked phyllo sheets into six equal strips.
  6. Place a small tablespoon of the salmon filling onto the wide end of each strip.
  7. Roll each strip diagonally into a cone shape, folding over the ends to seal the filling inside.
  8. Place the turnovers on a baking sheet. Brush the tops with remaining melted butter mixture.
  9. Bake for 20-25 minutes, or until the phyllo is golden brown and crispy.
  10. Let cool for a few minutes before serving.

Note

Keep unused phyllo dough covered with a damp towel while working to prevent it from drying out and cracking.

You can substitute fresh cooked salmon for canned salmon for a richer flavor. Ensure it is well-drained to avoid soggy pastry.

These turnovers are best served warm. They can be refrigerated for up to 3 days and reheated in the oven at 350°F for 10 minutes.

For a lighter version, you can reduce the amount of butter used in the phyllo layers, but the crispiness may be slightly reduced.
