Samosas #3
Description
These homemade samosas offer a satisfying twist on the classic Indian street food, featuring a savory filling of lean ground beef, aromatic ginger, garlic, and warm spices like cumin and cinnamon. Instead of deep frying, these are baked for a lighter, crispy texture that holds up beautifully to the moist, flavorful filling. The combination of earthy spices and fresh cilantro creates a complex flavor profile that is both comforting and exotic. Perfect for a hearty appetizer, a light main course, or a delicious snack, these samosas are ideal for potlucks, game day gatherings, or a cozy weeknight dinner.Ingredients
Directions
-
Break the cinnamon stick into small pieces to fit in the blender.
-
In a blender or food processor, combine onion, ginger root, garlic, cinnamon pieces, cardamom, cumin seeds, and salt. Blend until finely ground.
-
Spray a medium skillet with non-stick cooking spray and place over medium heat.
-
Add the ground beef to the skillet and break it up with a spoon. Cook until browned.
-
Add the blended spice mixture to the beef and stir well to combine.
-
Pour in 1 cup of water and bring to a simmer. Cook until the water has fully evaporated and the filling is thick.
-
Remove from heat and stir in the chopped cilantro leaves. Let the filling cool completely.
-
In a large bowl, cut the vegetable shortening into the flour using a pastry cutter or fork until the mixture resembles coarse meal.
-
Sprinkle water over the flour mixture, 2 teaspoons at a time, mixing with a fork after each addition.
-
Continue adding water and mixing until the dough comes together and can be formed into a stiff ball.
-
Divide the dough into 8 equal pieces. Shape each piece into a smooth ball.
-
On a lightly floured surface, roll each ball into a 6-inch flat circle.
-
Cut each circle in half to form two semi-circles.
-
Place a scant 1 tablespoon of the cooled beef filling onto the flat edge of each semi-circle.
-
Moisten the curved edges of the pastry with water.
-
Fold the pastry over the filling to form a triangle, pinching the edges firmly to seal.
-
Place sealed samosas on a baking sheet and brush lightly with liquid egg substitute.
-
Bake at 425°F (218°C) for 20 to 25 minutes, or until the pastry is golden brown and crispy.
