Description

These homemade samosas offer a delightful twist on the classic Indian snack by using lean ground beef and a fragrant spice blend. The filling combines aromatic cumin, cardamom, and cinnamon with fresh ginger, garlic, and cilantro for a complex, savory flavor profile. Encased in a sturdy, flaky pastry made from scratch, each bite delivers a satisfying crunch followed by a tender, juicy center. Baking them instead of frying makes them a lighter option while maintaining that golden-brown appeal.

Directions

  1. Preheat oven to 425°F (220°C).
  2. For the filling: In a blender or food processor, combine onion, ginger root, garlic, broken cinnamon stick, cardamom seed, cumin seeds, and salt. Pulse until finely ground into a paste.
  3. Heat a medium skillet over medium-high heat and spray with non-stick spray.
  4. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and no longer pink.
  5. Add the blended spice mixture to the beef and stir to combine. Cook for 2-3 minutes until fragrant.
  6. Pour in 1 cup of water and simmer until the liquid has completely evaporated and the mixture thickens.
  7. Remove from heat and stir in the chopped cilantro. Let the filling cool slightly.
  8. For the pastry: In a large bowl, cut the vegetable shortening into the all-purpose flour until the mixture resembles coarse meal.
  9. Sprinkle water over the flour mixture, 2 teaspoons at a time, mixing with a fork after each addition, until a stiff dough forms.
  10. Knead the dough briefly into a ball, then divide it into 8 equal pieces.
  11. Roll each piece of dough on a lightly floured surface into a 6-inch flat circle.
  12. Cut each circle in half to create two semi-circles.
  13. Place a scant 1 tablespoon of the cooled beef filling onto the flat edge of each semi-circle.
  14. Moisten the edges of the pastry with water, fold the straight edge over the filling to form a triangle, and pinch the edges tightly to seal.
  15. Place samosas on a baking sheet lined with parchment paper. Brush lightly with liquid egg substitute for a golden finish.
  16. Bake for 20 to 25 minutes, or until the pastry is golden brown and crisp.
