Description

Ingredients

Directions

  1. or vinegar+pickling spice 1/4 pt Proper beef stock Crushed garlic 1 Chopped onion 2 Bayleaves Salt Pepper Brown sugar Oil or rendered chicken -fat (schmaltz).
  2. If rolled, open out the beef.
  3. Place in a glass dish, and
  4. add bayleaves, onion, garlic, salt, pepper a pinch of sugar and the pickling mixture.
  5. Cover and put in the 'fridge for 3 days.
  6. Now and then, turn the meat and pour the liquid back over.
  7. Drain the meat and dry.
  8. Strain the liquid and make back to 1/4 pint.
  9. Add the stock to this liquid.
  10. Seal the meat in hot oil or fat.
  11. Put into a covered dish, add liquid.
  12. Cook for about 4 hours in a low oven (Mk 3).
  13. Remove the meat, slice and serve.
  14. Thicken the liquor and pour over.
  15. Latkes are the best thing to go with this!
