Ingredients

Directions

  1. Preheat oven to 400ðF (200ðC).
  2. Cut 1/4 inch off the top and root end of each onion to create a flat base, then peel off dry outer layers.
  3. Place onions root-end down in a baking dish and bake for 30 minutes, or until golden brown and tender.
  4. Remove onions from oven and let cool slightly. Hollow out each onion from the top, leaving a 1/2 inch shell (the outermost 2-4 layers). Chop the reserved onion flesh.
  5. In a medium skillet, sauté the chopped onion flesh and mushrooms over medium-high heat for 3 minutes.
  6. Add minced garlic and chopped apple, sautéing for another 3 minutes until softened.
  7. Stir in parsley, marjoram, lemon juice, paprika, salt, and pepper, then mix in the cooked wild rice.
  8. Fill each hollowed onion shell with the rice mixture.
  9. Pour vegetable stock into the bottom of the baking dish until it reaches about 1/2 inch depth.
  10. Bake for 20 minutes, basting the stuffed onions with the stock occasionally, until heated through.

Note

Use a melon baller or small spoon to carefully hollow out the onions while maintaining the structural integrity of the shell.

Ensure wild rice is fully cooked before mixing with the sautéed ingredients.

For a non-vegan version, you can use chicken stock instead of vegetable stock and add sautéed bacon bits.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350ðF for 15-20 minutes.

If onions are smaller, you may need to reduce the baking time slightly to prevent them from becoming too soft.
