Directions
-
Preheat oven to 350F (175C).
-
Cut chicken breasts into bite-sized pieces.
-
In a large skillet, heat 1/4 cup of butter over medium-high heat.
-
Brown chicken pieces in batches until cooked through and lightly golden.
-
Remove chicken from skillet and set aside.
-
Pour off excess fat from the skillet, leaving the browned bits.
-
Add dry white wine to the skillet and bring to a boil, scraping up any browned bits from the bottom.
-
Remove skillet from heat.
-
Drain oysters carefully, reserving the liquor in a measuring cup.
-
Add enough water to the oyster liquor to make 1 1/2 cups total liquid.
-
In a saucepan, melt the remaining 3/4 cup of butter over low heat.
-
Toss cracker crumbs with the melted butter until evenly coated; set aside.
-
In a large mixing bowl, combine the browned chicken, oysters, oyster liquor mixture, whipping cream, aromatic bitters, Worcestershire sauce, salt, pepper, thyme, and hot pepper sauce.
-
Gently stir to combine all ingredients without breaking the oysters.
-
Transfer the mixture to a greased 9x13 inch baking dish.
-
Sprinkle the buttered cracker crumbs evenly over the top.
-
Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
-
Garnish with fresh parsley sprigs before serving.
