This robust American chili packs a serious punch with its combination of rough-ground sirloin and pork, creating a hearty texture that holds up to long simmering. Ingredients

Directions

  1. Heat the corn oil in a large cast-iron skillet over medium-high heat.
  2. Add the rough-ground sirloin, pork, chopped onions, minced garlic, chopped bell peppers, and seeded jalapenos to the skillet.
  3. Cook the meat mixture, breaking up the clumps, until the meat is thoroughly browned and the onions are translucent.
  4. In a large pot, combine the beer and sour mash whiskey and bring to a slow boil.
  5. Transfer the browned meat and vegetable mixture into the pot with the beer and whiskey.
  6. Stir in the tomato sauce, tomato paste, stewed tomatoes, salt, allspice, Tabasco sauce, and 4 tablespoons of the cumin.
  7. Reduce the heat to low, cover the pot, and simmer for 1 hour, stirring frequently to prevent sticking.
  8. Remove the lid and continue to simmer for an additional 30 minutes, stirring often to allow the flavors to concentrate and the sauce to thicken.
  9. Stir in the remaining 1 tablespoon of cumin just before serving.
