Description

This elegant yet approachable dish features tender pork loin stuffed with savory crawfish tails and herbs, then grilled to perfection over mesquite wood for a distinct smoky flavor. The pork is basted with a sweet and savory honey-Worcestershire glaze that caramelizes beautifully on the grill. It is served alongside a luxurious, velvety shrimp sauce made with whipping cream, fresh parsley, garlic, and a hint of Tabasco for heat. The combination of the juicy stuffed meat and the rich seafood sauce creates a hearty, protein-packed meal that is perfect for special occasion dinners or when you want to impress guests with a restaurant-quality main course.

Ingredients

Directions

  1. Preheat your grill for indirect cooking and prepare mesquite wood chips by soaking them in water for at least 30 minutes.
  2. Slice the pork tenderloins down the center lengthwise to create a pocket, being careful not to cut all the way through, and season the interior well with salt, red pepper, and black pepper.
  3. In a saucepan, melt 3/4 stick of butter over medium heat and sauté 1/2 cup of chopped green onions, 1/4 cup of parsley, minced garlic, and 1/4 teaspoon of oregano for five minutes until fragrant.
  4. Add 3/4 pound of crawfish tails to the saucepan and sauté for another five minutes until the seafood is heated through and coated in the herb butter.
  5. Place each pork tenderloin on a large sheet of heavy-duty aluminum foil and spoon the crawfish mixture down the center of the pork pocket.
  6. Fold the sides of the pork over the stuffing and use kitchen twine to tie the tenderloin securely, ensuring the filling stays inside during cooking.
  7. Wrap the tied tenderloins tightly in the foil packets, sealing the edges well to retain moisture.
  8. In a small bowl, combine 1/2 stick of butter, honey, 2 tablespoons of Worcestershire sauce, and 4 tablespoons of water to create the basting sauce; set aside.
  9. Place the foil-wrapped pork tenderloins on the grill over indirect heat and add two handfuls of the wet mesquite chips to the hot coals for smoke flavor.
  10. Grill the pork for about 45-60 minutes, opening the foil packets briefly every 10 minutes to baste the meat with the honey-Worcestershire sauce once the pork begins to brown.
  11. While the pork grills, prepare the shrimp sauce by melting 1/2 stick of butter in a skillet over medium heat.
  12. Add 1 tablespoon of chopped onions, the remaining 1/4 cup of green onions, and 1/4 cup of parsley to the skillet and sauté for five minutes.
  13. Stir in 1/2 teaspoon of thyme, 1/2 teaspoon of white pepper, 1 teaspoon of salt, 1/2 teaspoon of oregano, 1 dash of Tabasco sauce, and 2 dashes of Worcestershire sauce.
  14. Add the peeled shrimp and the remaining 1/4 pound of crawfish tails to the skillet and sauté for five minutes until the shrimp turn pink and opaque.
  15. Pour in the whipping cream and simmer the sauce for three minutes, stirring gently, until it thickens slightly.
  16. Remove the pork from the grill, let it rest for 5 minutes, then unwrap and slice into 1-inch thick medallions.
  17. Arrange the pork slices on serving plates and spoon a generous portion of the hot shrimp and cream sauce over each slice before serving.
