Directions

  1. Preheat oven to 325&# 194;°F (165ðC).
  2. Halve the onions lengthwise and slice thinly.
  3. Place 2 tablespoons of butter, the sugar, and sliced onions into a heavy skillet over medium heat.
  4. Stir onions to coat them evenly with the sugar and butter mixture.
  5. Cook uncovered for 5 minutes, stirring occasionally, until onions begin to turn translucent.
  6. Remove the partially cooked onions from the skillet and set aside.
  7. Melt the remaining 2 tablespoons of butter in the same skillet over high heat.
  8. Season the pork loin with salt and pepper, then brown it on all sides in the hot skillet.

  10. Arrange the caramelized onions around the pork loin in the baking pan.
  11. Place the pan in the preheated oven.

Note

Serve with new potatoes and peas for a complete meal.

If Walla Walla onions are unavailable, other sweet yellow onions can be used as a substitute.

Ensure pork is cooked to a safe internal temperature; a meat thermometer is recommended for accuracy.

The blackberries should be added at the very end to prevent them from becoming mushy; their tartness balances the sweetness of the onions.
