  1. Butter a llb.
  2. loaf tin.
  3. Dissolve the sugar in the milk and stir in the yeast until thoroughly mixed.
  4. Leave in a warm place for 15 minutes.
  5. Meanwhile sift the flour and salt into a bowl.
  6. add the butter and rub in.
  7. Make a well in the centre and pour in the yeast mixture.
  8. Mix together vigorously until it forms a soft dough.
  9. Turn on to a floured surface.
  10. Knead gently and shape into a ball.
  11. Transfer to a greased bowl, cover and ieave to rise in a warm place for 30 minutes.
  12. Then work in the sultanas with the hands so they are evenly distributed.
  13. Re-form the dough ball and leave to rise for 30 minutes.
  14. Finally transfer to the tin; leave to rise for 45 minutes.
  15. Brush with beaten egg.
  16. Bake for 20 minutes in a pre-heated oven at 350F (177&# 194;°C) or Mark 4 until golden in colour.
  17. Turn on to a wire rack to cool.
  18. Serve sliced thinly and buttered.
