Ingredients

Directions

  1. Slice chicken breasts into 2-inch strips.
  2. In a shallow bowl, combine 2 tablespoons flour and 1/4 teaspoon fresh ground black pepper.
  3. Lightly dredge chicken pieces in the seasoned flour mixture, shaking off any excess.
  4. In a large skillet, heat 1 tablespoon olive oil over medium-high heat.
  5. Add chicken and sauté, turning once, until lightly golden on both sides, about 2 minutes per side.
  6. Transfer cooked chicken to a plate and set aside.
  7. Reduce heat to medium and add 1/2 cup thinly sliced red onion to the skillet.
  8. Cook onions, stirring constantly and scraping any browned bits from the bottom of the pan.
  9. Pour in 1/4 cup Madeira wine, turn heat to high, and cook, stirring constantly, until reduced by half, about 1 minute.
  10. Stir in one 14.5-ounce can of artichoke hearts (drained).
  11. Reduce heat to medium and cook, partially covered, stirring frequently, for about 3 minutes.
  12. Stir in 1 1/2 teaspoons fresh lemon thyme (or 1/2 teaspoon dried).
  13. Return chicken to the pan.
  14. Continue cooking over low heat, partially covered, for an additional 2 minutes to heat through.
  15. Season with 1/8 teaspoon salt if desired.
  16. Serve immediately.
