  1. Whisk together the olive oil, fresh lemon juice, balsamic vinegar (or red wine), chopped fresh rosemary (or dried), chopped fresh thyme (or dried), and minced garlic in a large bowl to create the marinade.
  2. Place the chicken breast halves in the bowl and toss to coat evenly with the marinade.
  3. Cover the bowl and refrigerate the chicken overnight to allow the flavors to penetrate the meat.
  4. Preheat your oven to 350&# 194;°F (175°C).
  5. Remove the chicken from the marinade, letting the excess drip off, and pat the pieces dry with paper towels.
  6. Heat 3 tablespoons of olive oil in a heavy large Dutch oven over high heat.
  7. Working in batches to avoid crowding, add the chicken skin-side down and brown well for about 3 minutes per side.
  8. Using tongs, transfer the browned chicken to a separate bowl.

  17. Place the Dutch oven back on the stovetop over high heat and boil the cooking liquid until it reduces to about 2 cups, approximately 15 minutes.
  18. Mound the prepared Mixed Vegetable Couscous on a serving platter.
  19. Arrange the chicken pieces on top of the couscous.
  20. Spoon some of the reduced cooking liquid over the chicken and couscous.
  21. Serve immediately, passing the remaining sauce separately for guests to add as desired.
