Description

Shahi Tukra is a luxurious Indian dessert that transforms simple white bread into a decadent treat. This royal bread pudding features slices of crustless bread fried in ghee until golden and crisp, then soaked in a rich, sweetened milk reduction infused with aromatic rose water and delicate saffron strands. The dish is finished with a sprinkle of crushed pistachios and edible silver leaf for a touch of elegance. It offers a beautiful contrast between the crisp, buttery bread and the velvety, fragrant milk sauce. Perfect for festive occasions, weddings, or as a special weekend indulgence, this dessert captures the essence of traditional Mughlai cuisine with its warm spices and rich flavors.

Ingredients

Directions

  1. Remove the crusts from the white bread slices.
  2. Cut the bread slices in half diagonally to create triangles.
  3. Heat half of the ghee in a frying pan over medium heat.
  4. Fry the bread slices, one at a time, for about 1 minute per side until golden brown.
  5. Remove fried bread and place on kitchen paper to drain excess ghee.
  6. In a heavy-based saucepan, combine evaporated milk and sugar.
  7. Cook the milk mixture over low heat for 10 minutes, stirring occasionally to prevent sticking.
  8. Add saffron strands and cardamom powder to the warm milk.
  9. Remove the saucepan from heat and stir in rose water.
  10. Place two bread triangles on each serving plate.
  11. Pour the warm milk sauce over the bread slices just before serving.
  12. Sprinkle with pounded pistachios and decorate with silver leaf.

Note

Allow the milk sauce to cool slightly before pouring so it soaks into the bread without making it soggy too quickly.

If saffron is unavailable, a drop of orange food coloring can mimic the color, but saffron provides the authentic aroma.

For a richer texture, you can substitute whole milk for evaporated milk, but you may need to reduce it longer to achieve the desired consistency.

Serve immediately while the bread is still crisp and the milk is warm.
