Ingredients

Directions

  1. In a medium bowl, combine the shrimp with 1/3 cup of the Italian dressing. Cover and refrigerate for 1 hour to marinate.
  2. In a small bowl, whisk together the peanut butter, soy sauce, honey, grated ginger, crushed red pepper, and the remaining Italian dressing until smooth. Set aside.
  3. Bring a large pot of salted water to a boil. Cook the angel hair pasta according to package directions until al dente. Drain well.
  4. Meanwhile, heat the vegetable oil and sesame oil in a 4-quart saucepan or large skillet over high heat until very hot.
  5. Add the shredded carrot to the hot oil and saut for 1 minute.
  6. Drain the marinated shrimp, discarding the dressing. Add the shrimp and chopped green onions to the pan with the carrots.
  7. Cook, stirring constantly, for about 3 minutes or until the shrimp turn opaque throughout.
  8. In a large serving bowl, toss the hot pasta with the reserved peanut dressing mixture.
  9. Add the shrimp and vegetable mixture to the pasta. Toss gently to coat everything evenly.
  10. Sprinkle with chopped cilantro and serve immediately.
