Description

This authentic Shrimp Creole features plump shrimp simmered in a deeply flavored sauce made from onions, bell peppers, celery, and tomatoes. The dish is seasoned with a blend of red and black peppers, thyme, and basil for a robust Creole taste. Serve over steamed rice for a complete and satisfying meal.

  1. Peel and devein the shrimp.
  2. Place heads (if you have them), and peels in a small saucepan and add the water.
  3. Bring to a slow boil over medium-high heat and let boil slowly for 15-20 minutes.
  4. Strain and discard the heads and peels.
  5. Place the oil in a Dutch oven or other large, heavy pot and place over medium-high heat.
  6. Add the onions, peppers, and celery and saute stirring often, until the vegetables are very soft, about 45 minutes.
  7. Stir in the tomatoes, salt, peppers, herbs, sugar, and shrimp stock and return to simmer.
