Description

This elegant Shrimp Sauce transforms humble eggs and fresh shrimp into a luxurious, silky topping. The base begins with a savory dashi stock, enriched with the umami depth of light soy sauce and the subtle sweetness of mirin. As the eggs gently poach in the simmering broth, they absorb the flavors, creating a tender, custard-like texture that coats the succulent shrimp. The result is a harmonious blend of briny seafood and comforting egg, reminiscent of high-quality teppanyaki dishes. It is incredibly versatile, serving as a standalone appetizer or as a decadent pour-over for soba noodles, udon, or steamed white rice. Ideal for a quick weeknight dinner that feels special, this dish comes together in under thirty minutes using pantry staples. The delicate balance of flavors makes it satisfying yet light, appealing to both seafood lovers and those seeking a gentle, savory comfort food experience.

Ingredients

Directions

  1. Peel and devein the shrimp, leaving the tails on if desired. Pat them dry with paper towels.
  2. In a small saucepan, combine the soba dashi, light soy sauce, and mirin. Bring the mixture to a gentle simmer over medium heat.
  3. Carefully crack the eggs into the simmering broth, ensuring they do not touch each other to prevent sticking.
  4. Add the shrimp to the saucepan, arranging them around the eggs.
  5. Simmer gently for 2-3 minutes, or until the shrimp are pink and opaque and the egg whites are set but yolks remain soft.
  6. Remove the saucepan from heat. Let the sauce thicken slightly for one minute before serving over noodles or rice.

Note

Ensure the shrimp are cooked just until pink; overcooking will make them rubbery.

For a richer sauce, you can add a small pat of butter at the end of cooking.

This sauce is best served immediately while hot. It does not store well as the eggs will continue to cook and the texture will change.

If you cannot find soba dashi, regular dashi stock or a mild seafood broth can be used as a substitute.
