Ingredients

Directions

  1. Rinse, seed, and chop the green chile peppers.
  2. In a saucepan, cook the finely chopped onion and minced garlic in 2 tablespoons of vegetable oil until the onion is tender.
  3. Stir in the undrained tomatoes, chopped chile peppers, 1/2 teaspoon of salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat.
  5. Cover and simmer for 20 minutes. Set aside and keep warm.
  6. Meanwhile, beat the egg whites until stiff peaks form and set aside.
  7. Beat the egg yolks with the remaining 1/4 teaspoon of salt for about 5 minutes until thick and lemon-colored.
  8. Gently fold the reserved egg whites into the yolk mixture.
  9. Sprinkle the flour over the egg mixture and fold in gently.
  10. Fold in the drained, chopped shrimp until just combined.
  11. In a deep skillet or saucepan, heat 1 inch of vegetable oil to 365F (185C).
  12. Spoon the shrimp mixture into the hot oil, using 2 tablespoons for small fritters or 1/4 cup for large ones.
  13. Fry for about 2 minutes on each side, or until golden brown.
  14. Drain the fritters on paper towels.
  15. Serve hot with the prepared tomato sauce.

Note

For best results, ensure the oil maintains a steady temperature of 365F to prevent the fritters from becoming greasy or burning.

You can substitute canned shrimp with fresh, cooked shrimp. If using fresh shrimp, peel, devein, and chop them before folding into the batter.

The tomato sauce can be made ahead of time and reheated gently before serving.

For a spicier kick, add a pinch of cayenne pepper or use hotter chile peppers in the sauce.

Serve these fritters with lime wedges and fresh cilantro for an extra burst of flavor.
