Description

This Shrimp in Tamarind Sauce is a quick and flavorful Thai-inspired dish that brings a perfect balance of sweet, sour, and spicy notes to your table. The star ingredient, fresh tamarind liquid, provides a deep, fruity acidity that complements the savory kick of fish sauce and the heat of fresh Thai chilies. The shrimp are quickly stir-fried to remain tender and juicy, coated in a glossy, reduced sauce infused with aromatic ginger and shallots. Garnished with fresh coriander, this dish is both visually appealing and incredibly satisfying.

Directions

  1. Make the tamarind liquid by pouring 1/2 cup boiling water over five or six fresh peeled tamarind pods.
  2. Let the tamarind pods sit in the hot water for 30 minutes to soften and release flavor.
  3. Pour the mixture through a strainer into a bowl, pressing firmly on the pulp to extract as much liquid as possible. Discard the solids.
  4. Shell the shrimp and cut them in half lengthwise.
  5. Toss the prepared shrimp with cornstarch and sesame oil, then refrigerate for at least 30 minutes.
  6. In a small bowl, combine the tamarind liquid, salt, fish sauce, sugar, and lemon juice. Set aside.
  7. In another small bowl, combine the minced ginger, chopped Thai chilies, and chopped shallots. Set aside.
  8. Heat the oil in a large skillet or wok over medium-high heat until hot but not smoking.
  9. Add the chilled shrimp to the hot oil and stir quickly to separate them.
  10. Cook the shrimp until just pink, then remove them from the skillet and drain in a colander.
  11. Remove all but two tablespoons of oil from the skillet.
  12. Heat the remaining oil over high heat.
  13. Add the ginger, chili, and shallot mixture to the skillet and stir until fragrant, about 30 seconds.
  14. Pour in the tamarind sauce mixture.
  15. Bring the sauce to a boil.
  16. Return the cooked shrimp to the skillet.
  17. Stir over high heat for about one minute, until the sauce reduces slightly and coats the shrimp.
  18. Transfer to serving plates and garnish with fresh coriander leaves.
