Description

These Sm Chicken Fajitas offer a unique twist on traditional Mexican fare by marinating boneless chicken breast in a zesty blend of soy sauce, orange juice, lemon, ginger, and garlic. The result is tender, flavorful meat that pairs perfectly with crisp-tender sliced onions and peppers. Instead of serving them open-faced, the filling is tucked into trimmed tortillas and pressed in a sandwich maker for a convenient, sealed pocket. This dish delivers hearty, protein-packed satisfaction in a fun format, ideal for quick weeknight dinners or casual gatherings.

Ingredients

Directions

  1. Cut chicken breasts into 1/4-inch thick strips.
  2. In a bowl, combine soy sauce, orange juice, lemon juice, sugar, crushed garlic, and ginger to make the marinade.
  3. Place chicken strips in a resealable bag or bowl and pour the marinade over them. Ensure all pieces are coated.
  4. Cover and refrigerate the chicken for several hours or overnight to allow flavors to penetrate.
  5. Drain the chicken well, reserving any excess marinade if desired, or discard it.
  6. Heat oil in a large skillet or wok over medium-high heat.
  7. Add the drained chicken strips, sliced onion, green pepper, and red pepper to the hot oil.
  8. Stir-fry the mixture until the chicken is no longer pink and the vegetables are crisp-tender, about 5-7 minutes.
  9. Preheat your sandwich maker or panini press according to manufacturer's instructions.
  10. Trim the curved sides from the flour tortillas to form 5x5 or 6x6 inch squares.
  11. Brush the outside of each tortilla square lightly with oil.
  12. Place 4 tortilla squares on the preheated sandwich maker grid, oiled side down.
  13. Spoon the hot chicken and vegetable mixture into the center of the tortillas, forming a triangle-shaped pocket if using a triangular press, or filling the center for square presses.
  14. Top with remaining tortilla squares, oiled side up, to create pockets or sandwiches.
  15. Close the lid of the sandwich maker and cook for 3 minutes, or until the tortillas are heated through, sealed, and lightly browned.
  16. Repeat the process with the remaining tortillas and filling until all ingredients are used.
