In a small bowl, whisk together the onion powder, salt, dried mustard, thyme, garlic powder, black pepper, white pepper, dill weed, and cayenne pepper to create the seasoning mix.

Prepare the vegetables: chop 1 cup of the onion, finely dice 1 cup of the eggplant, and chop 1 cup of the okra. Set aside the remaining 1 cup of onion, 1 cup of okra, remaining eggplant, and tomatoes for later.

Heat a large non-stick skillet or pot over medium-high heat.

Add the initial cup of chopped onion, the cup of diced eggplant, and the cup of chopped okra to the skillet. Sprinkle with half of the prepared seasoning mix.

Cook the vegetables, stirring occasionally, for about 4-5 minutes. Allow them to stick slightly to the bottom of the pan, then scrape them up to encourage caramelization and browning without burning.

Stir in the remaining seasoning mix and the chopped green bell pepper. Continue cooking and stirring for another minute until fragrant.

Pour in the apple juice, scraping the bottom of the pan to release any browned bits. Add the first cup of diced tomatoes.

Simmer the mixture, stirring occasionally, until most of the liquid has evaporated and the sauce begins to thicken, about 15-20 minutes.

Add the remaining onions, okra, eggplant, and tomatoes (plus tomato sauce if using). Stir well to combine.

Reduce heat to medium-low and continue cooking, stirring occasionally, for another 10-15 minutes or until the eggplant is tender and the mixture has reached a thick, smothered consistency.
