Snail Fritters / Beignets d'ESCARGOTS recipe image

These classic French beignets d’escargots offer a delightful contrast of textures, featuring tender, herb-marinated snails encased in a delicate, golden-fried batter. The dish relies on a simple yet elegant batter made from flour, egg yolks, and stiffly beaten egg whites, creating a light and airy crust that doesn’t overpower the savory filling. Marinating the snails in olive oil, parsley, tarragon, chives, and chervil infuses them with robust Mediterranean flavors before they are dipped and fried to perfection. Ideal for a sophisticated appetizer at a dinner party or as a unique starter for a French-inspired meal, these fritters are best served immediately while hot and crisp. Pair them with a light white wine like Cassis or Coteaux d’Aix-en-Provence to complement the herbal notes and rich texture of the fried dough.

Ingredients

Directions

  1. Drain the snails thoroughly if using canned or pre-cooked varieties.
  2. In a small bowl, mix olive oil with finely chopped parsley, tarragon, chives, and chervil.
  3. Toss the snails in the herb-oil mixture and let them marinate for at least 1 hour.
  4. In a medium bowl, whisk together the egg yolks, flour, and 2 tablespoons of olive oil until combined.
  5. Gradually add a little warm water to the yolk mixture, whisking constantly, until you achieve a smooth, creamy batter consistency.
  6. Season the batter with salt and pepper, then set aside to rest.
  7. In a clean, dry bowl, beat the egg whites until stiff peaks form.
  8. Just before frying, gently fold the stiff egg whites into the batter to maintain airiness.
  9. Heat olive oil in a deep fryer or heavy saucepan to 350&# 194;°F (175ðC).
  10. Drop small handfuls of marinated snails into the batter, coating them evenly.
  11. Carefully remove the coated snails from the batter and drop them into the hot oil, frying no more than two at a time to avoid overcrowding.
  12. Fry until golden brown and crisp, turning occasionally for even cooking.
  13. Remove fritters from the oil and drain on paper towels.
  14. Garnish with fried parsley leaves and serve immediately.

Note

The original recipe suggests marinating 100 snails with only 1 tablespoon of olive oil. For better flavor distribution, increase the olive oil quantity to ensure all snails are adequately coated.

Ensure the egg whites are beaten to stiff peaks but do not overmix when folding them into the batter, as this will deflate the air bubbles and result in a denser fritter.

Serve these fritters immediately while the exterior is still crisp. They can be kept warm in a low oven (200ðF/95ðC) for up to 15 minutes if necessary.

Recommended wine pairings include Cassis, Coteaux d'Aix-en-Provence, or Saint-Joseph.
