  1. In a large skillet or Dutch oven, cook the diced bacon over medium heat until golden and crisp.
  2. Remove the bacon with a slotted spoon and drain on paper towels. Reserve the bacon fat in the pan.
  3. If there is excess fat, pour off all but 1 tablespoon, then add the olive oil to the pan.
