Directions
-
Preheat the oven to 350F (175C).
-
Wrap the six flour tortillas tightly in aluminum foil.
-
Place the foil-wrapped tortillas in the preheated oven and warm for 10 minutes to make them pliable.
-
While the tortillas warm, cut the cheese into six even sticks or strips.
-
In a medium bowl, combine the refried beans, 1/2 cup chopped green onions, drained green chile peppers, and chili powder. Stir until well blended.
-
Remove one tortilla from the foil bundle, keeping the remaining tortillas covered to stay warm and soft.
-
Spread approximately 1/3 cup of the bean mixture onto the tortilla, spreading it to within 2 inches of the edge.
-
Top the bean mixture with about 1 tablespoon of the chopped tomato.
-
Place one cheese stick in the center of the tortilla on top of the beans and tomato.
-
Fold the two sides of the tortilla inward over the filling.
-
Roll the tortilla up tightly from the bottom edge, jelly-roll style, to form a bundle.
-
Place the seam-side down on a greased baking sheet.
-
Repeat the assembly process with the remaining five tortillas, bean mixture, tomato, and cheese sticks.
-
Bake the bundles in the 350F (177C) oven for 15 to 20 minutes, or until heated through and the cheese is melted.
-
Serve the bundles warm. Spoon taco sauce over each bundle and sprinkle with additional sliced green onions if desired.
