Description

This Southwest Fajitas recipe delivers bold, aromatic flavors with tender slices of lean beef flank steak marinated in lime juice, chili powder, cumin, and garlic. The quick broiling method ensures a juicy interior with a slightly charred exterior, while the warm flour tortillas provide a soft, pliable wrap. Topped with fresh salsa and a cool, tangy plain nonfat yogurt, these fajitas offer a perfect balance of heat, zest, and creaminess. Ideal for a satisfying weeknight dinner or casual entertaining, this dish comes together quickly with simple ingredients.

Directions

  1. Trim excess fat from the beef steak.
  2. Prick the beef all over with a fork.
  3. In a shallow glass or plastic dish, whisk together lime juice, chili powder, cumin, and crushed garlic.
  4. Place the beef in the dish and turn to coat both sides thoroughly with the marinade.
  5. Cover and refrigerate for at least 4 hours, turning the beef occasionally.
  6. Preheat the oven to 325°F (165°C).
  7. Wrap the flour tortillas in aluminum foil.
  8. Heat the wrapped tortillas in the oven for about 15 minutes, or until warm.
  9. Remove tortillas from the oven and keep them wrapped to retain heat.
  10. Set the oven control to broil.
  11. Spray a broiler pan rack with nonstick cooking spray.
  12. Place the marinated beef on the prepared broiler pan rack.
  13. Broil with the top of the meat 2 to 3 inches from the heat source for 10 to 12 minutes, turning once after 6 minutes, until medium doneness.
  14. Transfer beef to a cutting board and let rest for a few minutes.
  15. Slice the beef diagonally across the grain into very thin slices.
  16. Place one-quarter of the beef slices, 2 tablespoons of salsa, and 2 tablespoons of yogurt in the center of each tortilla.
  17. Fold one end of the tortilla up about 1 inch over the beef mixture.
  18. Fold the right and left sides over the folded end, overlapping slightly.
  19. Fold down the remaining end to seal the fajita.
  20. Serve immediately with additional salsa and yogurt on the side if desired.
